Chef Antoine has lived in Jakarta for many years. He worked in Michelin restaurants in France, as well as in England, Switzerland, Africa, the Middle East and Asia, before settling down in Indonesia. Having previously worked for Borobudur and Le Meridien Hotels as a chef, Monsieur Audran strives to present excellent French cuisines.

Chef Audran understudied with Chef Paul Bonin at the Michelin 2-star restaurant for 4 years. He then moved to London to work for the French embassy and during that time he moved from 3rd Commis to 1st Commis and catered to the Who's Who of the world. He then worked at several Michelin star establishments in France and Switzerland, mentored by famous chefs such as André Guillot and Jean Delaveyene. At the age of 23, he was appointed Sous Chef Kitchen of Château de La Jonchère, Bougival, France. The 2-star Michelin establishment was set in a historic castle that attracted the attention of France's political elite, including the former French President.

By the age of 21, he had traveled to Cairo, Egypt to open the Cairo Concorde Hotel as Chef de Partie, Kitchen. But it was not until the age of 26 that his career took a global flavor with the Le Meridien group. He was the youngest to be appointed Executive Chef by the Le Meridien Group. From Congo to Baghdad, Thailand, Indonesia to Bahrain, Chef Audran took the Executive Chef helm by the horns and navigated international cultural waters. In the major cities Bangkok, Manama and Jakarta, he catered to rulers, presidents, kings and other royalties.

Chef Antoine Audran is now the Executive Chef and proprietor of Java Bleu - a place that stands for gastronomic French Cuisine in Jakarta. He is reputed for taking great pride in his creations and his pan-fried Duck Foie Gras holds the pole position in Jakarta. The menus change weekly and the establishment is frequented by other chefs in town.

Antoine contributed one of his famous recipes into East Meets West: Celebrity Charity Cookbook amongst other world-renowned chefs, such as Nigella Lawson and Jamie Oliver. The proceeds from the sale of the book went to tsunami relief in Indonesia and Sri Lanka.
